Benefits of the 7.8 gallon High Density Polyethylene (HDPE) Brewing Bucket:  You may hear that it is not advisable to brew in a plastic bucket.  In general, if you do not take good care of your equipment, then no you should not home brew in a bucket.  However, if you take good care of your food grade plastic bucket, do not throw brewing equipment in your bucket causing it to scratch the side walls, then you will be just fine brewing in plastic and will produce delicious high quality beers every time you brew.  HDPE is a soft plastic and reasonable care precautions need to be taken if you plan to brew in a plastic bucket.  These are the steps suggested by Learn To Brew to keep your bucket producing excellent homebrew for years to come.  First, always use a light detergent like B-Brite to clean the bucket.  Use a cloth or paper towel to wash away any hop debris or protein build up that might occur after a brew.  Second, rinse the bucket with water.  If you are storing the bucket after a use, then dry the washed bucket with a soft towel and store upside down.  Storing upside down allows any of the excess liquid to drain out, and also prevents you from storing any equipment in the plastic bucket that might scratch the plastic.  Scratches in plastic can hide bacteria that is almost impossible to remove.  However, if you take the Learn To Brew steps provided, then your homebrewing will be successful. 

A 7.8 gallon fermenting bucket gives the home brewer the opportunity to brew large batches and also gives the brewer more room for the krausen that forms when high alcohol beers are being brewed like Double IPAs, Imperial Stouts and Belgian Strong Ales.  This extra room will help save you from a krausen brew over and making a mess in your brewing area.
